Tonight I made some fried strips of chicken breast; with leftover/frozen red-beans and rice; and veggies in a cheese sauce. Garnished with some Lemon Balm relish (see above) on the beans, and a sprig of Lemon Balm leaves to enhance the meal.
For brunch this morning, I made chicken cordon blue (not made by me, but frozen); meatballs in marinara (previously made by me, frozen & reheated); and red beans and rice (previously made by me from scratch, frozen & reheated). Kind of an odd mix, but it was tasty.

My supper tonight came from frozen reheated leftovers. I made meat lasagna (topped with some cheese); seasoned broccoli which I cooked and froze a few days ago; and cheesy potatoes, made from a couple of left over dishes which I combined into one and reheated, and then spiced up with a little Sriracha sauce.
Supper tonight consisted of baked chicken and cheesy potatoes (both with an herbal white sauce over them), and steamed broccoli with cheese. And a pepperoncini.

Tonight's supper was exceptional. I butterflied and stuffed a couple of pork chops and stuffed them with pork stuffing. I breaded them and lightly fried them then backed them with a topping of marinara sauce and cheese. For side dishes I steamed some fresh broccoli and smothered it in cheese sauce from scratch. I also made some cheesy potatoes on the side. Excellent supper!

This morning for brunch I made "Gu?yú, hu?yécài hé ji? xiàn f?ntiáo." (Salmon with broccoli and ravioli). All from frozen supplies provided by the St. Louis Food Outreach Center... and very excellent!
My brother made a batch of cookies to take in to his office. I snitched one when he wasn't looking ... lol ... and it was delicious! (But he counted them and knew ... oops!). But it was a damn fine cookie ;) lol
Today is Cinco de Mayo, and I had planned on making Mexican food, but we just had enchiladas recently and refried beans last night ... and were just not really in the mood. So I cooked some grilled cod, ziti and shrimp, and peas & pearl onions in Alfredo sauce.
