I've really gotten good at breading and frying chicken. I've been doing this for many years, but never really been pleased with my work until lately. I am getting the breading just right, and the meat remains tender and juicy. It has taken me about 30 years to get this where I want it.
Meanwhile, the fried okra kind of sucked. It's the pre-made kind and it's the brand I bought. The kind they sell at Shop n Save sucks, but the brand at Schnuck's comes out good. I would make it from scratch, but I don't think Skip would like it. (Skip is my brother).
I made the mashed potatoes from scratch, but Skip is saying he would rather have the potato flakes instead. Okay ... what ev! LOL
Meanwhile, I had some left over sausage gravy from breakfast last Sunday and re-heated that to go over the mashed potatoes.
Since I had a half-head of lettuce and a half of tomato, and a half of onion in the icebox, plus a half bottle of Italian dressing, I made a salad to go with this meal. We almost never eat salad, so this was out of the ordinary for us...
